Cookbook Countdown #14: Rachel Khoo's Souffle omelette with piperade

of Rachel Khoo's The Little Paris Kitchen
an interesting twist by Rachel for a traditional recipe of piperade made with eggs
where the eggs are scrambled into the dish.  Here the eggs (I used one) are cooked
separately from the pepper relish, and souffle style too!  Very light!
Remember its souffle, hence serve immediately!
 
The pepper relish can be made and kept in the fridge for up to three days!
and I do have extra!
