CtBF ~ Butternut squash crumble

Butternut squash crumble - page 215
I managed to buy half a butternut squash, and proceeded to make just enough for two pax (hence I have squash left over)
I used vegetable stock instead of chicken, but still flavorful and OMG the aroma from the kitchen permeates out to the entire living room. I made the crumble with a butter knife, no messy fingers nor pulling out any electrical appliances.

*I accidentally added a secret ingredient to the crumble what I though was a small container of bread crumbs turned out to be coconut flakes!  Let's see if hubby can make out the flavor*

*hubby had his portion for dinner and when I walked through the door, he asked me what was that I made for him... 'something squash' I said, and he 'very nice, make more of this stuff, I can eat lots!'

 The crumble was nice and crispy (I used semolina) 
ps: I did not roast the squash first before the crumble, the squash was done enough for me, so I bake it once only with the crumble topping,
pps: the accidental coconut flakes? not noticeable when I ate my portion

Accident can be a meaningful discovery. Coconut and squash can share the stage, now we know. Good looking Friday's dinner!

hee hee, love the "accident" that worked out well! I can see it being quite good and how one could even do sort of a Thai-ish version of the recipe with a little coconut milk and curry flavorings instead of the thyme. That sort of gives me an idea...! Looks great, Emily!

It was 1:3 ratio for coconut flakes and bread crumbs

Some of my favorite versions of recipes come from accidents like yours. And it sounds like your husband was really happy about the result. Good to know that roasting the sauteed squash was unnecessary. That step was annoying. I'm skipping it next time.

Sometimes it is better when hubby has no clue as to what is in a recipe. Yours turned out lovely, and yes, I think we could skip the
roasting part of this recipe.

Emily, I just realized you tried bringing up my post, thank you. I just
don't understand why it doesn't always work, it drives me crazy.
When I try it on FB at least I can test it first for myself, but not on the blog. Oh well, somehow people still find it which amazes me.

Only you would go out on the coconut limb. Actually I think coconut might be a nice addition. I need to finish up a bag before I pack up to head to California for the winter so I might throw in a little when I make this crumble. Why not? Yours looks delicious as everyone else's does. Cannot wait to make it.
