Simple: tinned sardines, with balsamic vinegar, mixed with a fork. Pile mixture on toasted wholemeal bread, top with grated cheese if using. Transfer to grill tray with cut tomatoes, grill for 2-3 minutes or till cheese is golden brown and tomatoes are hot.
Cut into fingers and top with the tomatoes.
