Cookbook Countdown #16: Chicken fillet with creamy leek and bacon sauce

Cooking for one:
Instead of white potatoes I used sweet,
skinless chicken breast, bacon, leek,
(no wine, no stock) I used a splash of water
(I should have reserved that small amount of water
I par boil the sweet potato in)
crushed garlic, olive oil
no need for salt and pepper because of the bacon
and I substitute the cream with coconut cream
easy peachy... this was my breakfast!
Chicken fillet with creamy leek and bacon sauce
recipe from pages 176-177 of
Julie Goodwin's $20/20min Meals
