This butter beans was a big hit. I could go either way with the lemon.
I actually didn't add the lemon juice to this one but next time I make it, I'll remember to add a little at a time!
As for I am all about the lemon! It probably depends, too, on whether your lemon is extra juicy, or not. Either way, delicious!

Ditto. I love Swedish meatballs, Emily. I really like lemon and use it often but am in agreement with you to go slow and not let it flow. Subtle, it is not. BTW, you are always giving me good book suggestions so here are two back to you. I just received Melissa Clarke's "Dinner" cookbook and it's really, really good. I just ordered "Simple" by Diana Henry. I had been thinking about ordering it but, honestly, who needs another cookbook? Katie and her family were here this week-end. She, of course, has it and says it's good.

What a good idea to serve these with Swedish meatballs - they're so good! Lemon can be a tricky thing sometimes, like salt, I guess.
This has been one of my favorite recipes in the book so far. I made with asparagus but will try with green beans as written too. ALso want to try with broccoli. It's the butter, not the veg, that's the star here.
