Cookbook Countdown #15: JO's Skagen (shrimp on toast)

I made this as an appetizer for Sunday's dinner
one piece each!
bread, prawns, finely diced onions, sour cream,
lemon rind and juice, salt and pepper,
fennel fronds and pomegranate seeds for garnish
