Cookbook Countdown #15: Brown-sugar squash and brussels sprouts en papillote

 I had brussels sprouts to use up and pumpkin too.
and needed a quick fix dinner for Sunday for one pax:
Made two portions - one just the vegetables and an apple,
the other topped with fish fillets, enoki mushrooms and young ginger,
drizzled with the balance of the olive oil from the veggies.
Used parchment paper instead of foil and totally forgot
about the popping a sage leaf on top of each
(and I did buy them sage!) 
 Put the parcels on the griddle pan, and domed them
with a metal cake pan and a small saucepan!
I just hate getting the oven going for small bakes!
