Cookbook Countdown #1 ~ MY's Sweet and Tangy Lotus Root Salad

These are the only cookbooks by Martin Yan
that I collected over the years but not cooked a single
recipe from any of them!

 Sweet and Tangy Lotus Root Salad ~ pages 110-111
 this has lotus root, cucumber, red radishes with a garnish of cilantro sprigs
for the dressing ~ it has sugar, rice vinegar,
minced cilantro, minced ginger, minced red chili
with a big squeeze of lime juice
after marinating the salad for ten minutes
serve at room temperature or refrigerate till chilled.
 finally got to tick this off my-to-do-list!
