FFwD: Piperade stir-fry

 I got peppers:
green
red
yellow
orange
and
red chili, red onion and garlic
 below: not runny but with baking soda in the boiling water
it was easy to peel
but must cut short the cooking time for the egg
accidently timed it for 9 mins but should have been 7!
 
Piperade stir-fry with homemade (not mine) beetroot pasta
from Vi Vien's Homemade Vegepasta
crispy bacon and soft boiled egg
Lingham works well here too!
 
dinner for one (me), DH is away back in a couple of days
doubt there will be any leftovers....
DELISH!

Love the way you served this - the homemade beet pasta sounds especially delicious. I think I want to keep some of this stirfry in the fridge all summer long. It would be good with so many things.

Everything tastes better with an egg on top, doesn't it? I've never seen beet pasta. How pretty.
