From Jamie's The Naked Chef Series
a quick and easysoup to rustle up during the week
page 21 of Jamie Oliver 'The Naked Chef'
I used canned chickpeas so the prep and cooking is
so much shorter and easy,
but if you are not using canned beans,
Jamie has laid out the hows and dos to cooking pulses
from scratch on page 157 in the same book
my adaptation:
*1 can of chickpeas, rinsed and drained well
*two smallish potatoes, washed, peeled and diced
*two cloves of garlic, finely sliced
*3 leeks, green parts only - wash well and sliced finely
*knob of butter
*I used water
*salt and pepper to taste
*cheddar cheese
how to:
in a heated pan - throw in the knob of butter
add the leeks, potato and garlic
cook till tender
add the water, cook for another 5 mins
add the chickpeas, cook for 10 mins
season with salt and pepper
using a masher, I mash the contents slightly in the pot
crumbled some cheese into the pot
garnish with chopped spring onions
YUMMS!

I always remember Jamie Oliver in The Naked Chef... He is always serving his food to a bunch of friends at the end of each episode of his of series. Did you serve your rustic soup to a bunch of friends? :D
