from Donna Hay's Simple Essentials ~ Chicken
using instead of chicken fillets,
*one poached chicken thigh, tear into thick strips
*a clove of garlic, minced
*a teaspoon capers, drained and rinsed
*cherry tomatoes, halved
*a bunch of sweet basil leaves
*salt and pepper
*oil
(if using chicken fillet, fry on both sides until cooked true)
I gave the poached chicken strips a quick heat through in a little oil
remove from pan and keep warm
sauted the garlic, capers
add the tomatoes, cook till caramelized
salt and pepper
return the chicken to the pan
toss to coat, turn off heat
stir in the basil leaves and serve

I thought you are JO fan but didn't know that you like DH too... DH's food has a typical artistic look and I see that you are scattering your capers to recreate her style :D
