Hi Emily,
Arm muscle! I use the muscle from the stand mixer! Haha!
These bread are soft and fluffy, and I love the citrusy taste and fragrance of these rolls! Good with a cup of hot black coffee!
And about the pan that you asked for, I bought it from Aino. I love the stuffs there! The pan does not say that it is suitable for oven use, but the whole pan is stainless steel, and I thought that with a temperature of 180C, for a short period of time would be OK. It seems OK, though I would not recommend to use it at a very high temperature, in case it starts to warp! Perfect for making frittata!

Hi Emily,

You are right that this bread recipe requires minimal kneading. I used rice bran oil instead of butter and yield quite ordinary tasting bread... Regret regret... Forget about health... Butter is good!

hi emily, i hardly hand knead my bread..! i read about your suggestion of orange juice in zoe's post..i might just do that..
