A quick vegetarian dish
4 large florets of cauliflower, cut into smaller pieces
2 tablespoons sweet corn kernels
1 coriander sprig for garnish
a big splash of evaporated milk
1 tablespoon cream cheese
1 tablespoon butter
to season:
salt to taste
crushed black pepper
mushroom stock powder if you like (I did without)
rapid steam your cauliflower for 5mins, remove and dish up*
(* remember to drain them well ~ I should have!)
heat up your pan, melt the butter, add the milk,
cream cheese and seasoning - bring to a boil.
add the sweet corn, cook a further minute
and pour the sauce over the cauliflower.
