Steamed pumpkin cakes
Steamed pumpkin cakes:
Beat 3 eggs with 100g brown sugar until soft peaks,
add 100ml of coconut milk, mix well,
add 150g of mashed cooked pumpkin, mix well,
fold in 150g cake flour sifted with 1tsp baking powder,
spoon into well greased moulds,
steam over rapid boil heat for 10 mins.
remove from mould as soon as possible.
Steamed sweet corn cakes:
Beat 2 eggs with 100gm brown sugar till soft peaks,
add 100ml coconut milk, mix well,
add 130g sweet crunchy corn kernels (drained),
add 120g self rising flour sifted with 1/2 tsp cream of tartar,
mix well with spatula, making sure all the flour is mixed in well,
pour batter into well greased 8" square none stick pan,
steamed over rapid boil heat for 20 mins.
