Chicken wings are marinated with shao hsing wine, sugar, light soy sauce, cornflour, sesame oil and salt; and left covered in the fridge for thirty minutes.
Next stir fry in hot oil sliced onions, ginger slices, crushed garlic and spring onions strips for a minute; add wings together with the marinate. Sear wings on both sides for a bit of color. Add wine, oyster sauce, stir fry for another minute, reduce heat, add water. Simmer, covered, for several minutes or till wings are tender or just cooked. Dish out and garnish with chopped spring onions. I served the wings with the sauce over egg noodles.
