CtBF ~ MPK: Wheat berries salad with roasted root vegetables

I cooked the wheat berries in the morning using my thermal pot
hence I only need to bring it to the boil and let it simmer for 5 mins
before transferring to the insulating pot.  Saved me 40 mins of gas!
Evening comes, the wheat berries are ready!
(actually, it only takes two hours for the berries to be cooked, but
this home cook was not home yet!)
 
I used carrots, pumpkin, yam and jicama but you can use other root vegs)
I love using pomegranate molasses (instead of honey)
in the dressing!
Hope hubby likes his salad!

IN France you can buy quick-cook wheat berries - I wish we could here too! Your method for cooking them is perfect!

Well, Emily, did your husband like the salad? Please don't leave us hanging as to whether he was thumbs up or down. You know, Emily, we've got some huge problems in America and frankly, I can handle no more stress. So. message me. Let me know. No wheat berries to be found on the Central Coast of California. I used farro and really loved this grains salad. With all the variations David suggested, I will be making this alot, I think.

I like the combination of root veggies that you used. I'm not familiar with the pom. molasses, must check that out. This was a great salad that we both really enjoyed.
