Cookbook Countdown #15: Mushroom omelet with grated carrot salad

Inspired by my fellow Cookbook Countdown contributor >HERE<
using no butter at all!
I used up the two types of mushrooms I had from the fridge,
making a two egg omelet each for the two of us at home,
filling them with the sauted mushrooms!
