Cookbook Countdown #13: RK's Mini focaccia buns

I am revisiting Rachel Khoo whose books I used in CC#2 in February 2016!
I finally made Rachel Khoo's Mini focaccia buns
over the three day holiday weekend!
pretty pleased with the results!

strong bread flour
instant dried yeast, sea salt
lukewarm water and olive oil
for the bread dough
 
 hard cheese cubes, sliced garlic, black olives, rosemary
(and my favorite - poppy seeds!), 
sea salt flakes and olive oil for the garnishing
As I sat down and ate one of each hot from the oven,
I decided hubby would like to dunk them into some liquid,
so instead of serving them with ham and roasted veggies (and puds),
I turned the roasted veggies into roasted veggies and tomato soup!
Great for dunking!

These focaccias are so cute! I have never made cute little focaccia, only the flatbread style ones. Dunking them into homemade roasted veggie soup sounds delish!

What a great way to make the fococcia. Minis with some great toppings. And the soup - yes please!
