Cookbook Countdown #13: AMFT ~ Matafan (fluffy mashed potato pancakes)

A delightful breakfast of pancakes made with leftover salmon and potato puree:

I had mashed potatoes (with salmon) left over from a dish I made with another group, and thought I might revisit this fluffy potato pancake with it.  The only variation from the original matafan I made way back when HERE - were the addition of cooked salmon and not have the egg white beaten to soft peaks - but the pancake was still light!  Served with pickled daikon and Vietnamese coffee.

What a clever idea to turn your leftovers into pancakes! Looks delish, makes a perfect meal! Pickled daikon? Yum!

Looks like a wonderful pancake to me...and the idea of eating picked daikon with it just really sends it over the top, great choice.

I like the idea of the picked daikon. It would definitely add some 'bite' to those lovely fluffy pancakes. I'll have to look up that recipe.
