half an organic carrot - grated
hand torn coriander leaves - a handful
mixed well together:
olive oil, Dion mustard, honey, salt and lime juice
Delicious! I paired it with chicken from last night's supper >here<
and
it was part of my dinner too!

Nice! I love how you made such a tiny amount! Carrots were a pain to grate!
I made a smaller amount too. This was delicious wasn't it?
I've used two carrots too, and it was a chore to grate those carrots! Luckily the taste makes up for it! Lovely meal!
Who says you can't minimize! I only used three carrots, but you beat me at that. I have a bowl full and will probably eat it for a week. It's good though, and we really liked it.
I think as this carrot salad sits in the refrigerator, it grows or expands. No matter how many times I served it with my meal or took a forkful or two for a snack but there always was more. At the end of the week, I tossed the remaining portions. Your two meals look delicious.
Wow, that must have been a BIG carrot. It looks like much more than I would expect from just half a carrot. Nice salad!
