Cookbook Countdown#7: CAN ~ Balinese fried noodles

Look what I found from my stash ~ Classic Asian Noodles (CAN)

pages 126-127: Balinese fried noodles
 
 ingredients:
fresh wheat noodles, cooking oil, eggs to make omelette,
sliced onions, prawns peeled and deveined,
cabbage shredded, carrot cut into stripes.
spice paste:
(to be blended after sauteing - but I skipped this step as 
the ingredients were chopped rather fine; and I mashed up the
tomatoes with back of wooden spoon)
ripe tomatoes - skinned and roughly chopped
cooking oil, shallots peeled and thinly sliced
garlic peeled and sliced
fresh red chili seeded and coarsely chopped
ginger slices, lemon grass finely sliced
water, sugar, salt, sweet dark soy sauce
garnish:
fried shallots, lime wedges
This was delicious!
