Cookbook Countdown #7 ~ CAN Mung beans noodles with dried seafood

Look what I found from my stash ~ Classic Asian Noodles (CAN)

Fried mung bean noodles with dried seafood ~ pages 190-191
 dried squid, dried scallops, dried chinese mushrooms
(reserved liquid from soaking dried seafood - I soaked them overnight)
chopped garlic, leeks, spring onions, carrots for color (I added)
salt, white pepper, light soy sauce, dark soy sauce
condiments: chili padi and lime
 saute minced garlic in hot oil till fragrant
add the seafood and mushrooms,
leeks, carrots, salt, pepper and soy sauces
stir fry ingredients for a couple of minutes
add the reserved soaking liquid and soften mung bean noodles
simmer for 5 mins, add spring onions - stir to mix well
serve with chili padi and lime or sambal
tasty tasty
