TCS ~ June's Blueberry Muffins

just to let you know that the picture below is
not part of the making of blueberry muffins...
(guess which cake!)
the above is the best part of my first cake...
things got bad from then on!

 I like this blueberry muffin recipe... so easy to put together
first sieve the flour together with baking powder, salt and sugar 
add the blueberries (which had been washed, drained and paper towel dried)
to the dry ingredients  - set aside
then beat up the eggs, add the milk and lemon zest.
add the liquid ingredients all at once into the dry ingredients.
a quick stir with a spatula to just about combine the ingredients
lumpy? just fine!
spoon into buttered molds and baked for 20-25 mins
cooled in their pans for 2-3 mins
remove from pan and cool further on wire rack
 
very moist 
(perhaps instead of 1/2 cup of milk... I read 1 cup?)

I am itching to make something with blueberries. I just saw some yesterday at the Farmer's Market but did not buy any. :(

I love those pans! And I do love a good blueberry muffin. I have a lot of berries right now, maybe I should still give these a try!

Well at least these muffins look like they were a success! They look so light and spongy!
