page 58 - Chili beef slices with mushrooms
Firstly marinate the sliced beef with freshly squeezed orange juice,
lime juice, chili paste (I used harissa).
mix well and leave to marinate for minimum 10 mins
we need to reserve the marinate (for later)
heat oil in wok / fry pan - fry marinate meat 2-3 mins on high heat
lower heat - add sliced onions, (I added carrots for color!),
chili and mushrooms
add reserved marinate and continue cooking on low heat
stir frying to combine ingredients with marinate
cover and cook for 5 mins
add peanut butter, season with salt and sugar to your taste
cook until sauce thickens, remove and serve with hot rice
all for me!
