Fusilli with Garlicky Broccoli - pages 128-129
1) heat up olive oil in my non stick fry pan over very low heat
2) add smashed peeled garlic (8 cloves) and saute till they sizzles,
watch them and do not let them brown, turn garlic and cook for a couple of mins more
3) add salt, pepper, paprika, pepper flakes, and salt and pepper to taste;
stirring well to avoid excess browning
4) when smaller garlic pieces turns golden, turn off heat and set aside.
When pasta is cooked (I added the cut broccoli two mins before pasta is ready)
drain the pasta (while reserving 2 ladles of pasta water)
Re start heating the oil mixture, add pasta and toss to ensure the pasta
and broccoli are well coated with the oil and garlic, using the
reserved pasta water if necessary to moisten the pasta.
Garnish with cheese and serve immediately.

Must be very garlicky fragrant! And I love broccoli! Yum!
Healthy and good for folks with colds!
Hi Emily,
Nice vegetarian pasta. I like the fact that this recipe doesn't need the addition of any meat... just the broccoli and garlic will make it very yummy! :)
