My December pick is Walnut (& Almond) Raisin Rum Cakes!
I am trying to clear my ingredients stock,
so I used both walnuts and almonds.
After adding the rum infused raisins to the batter,
I put half the batter into another bowl, added the chopped almonds
and used two mini cake tube pans.
Into the balance of the cake batter, I used chopped walnuts
and used a small cake tube pan.
With the balance of the batter I had enough for five cuppies!
This cake is amazingly moist (without being wet!)
it must be the buttermilk!

So pretty Emily! It sounds like a good recipe that you made great by dividing it and using two kinds of nuts...brilliant!
Those look great and sound perfectly festive! I love that you split it and did two different kinds of nuts. Which did you prefer?
