CCC (Cottage Cooking Club) ~ July 2015

Enjoying my second month cooking along

with a healthy lifestyle cooking group

Every Day Veg (well... almost everyday!)

In the order of what I ate...

(1) Green beans, new potatoes and olives
from page 222 - cupboard suppers

(2) Summer stir-fry with egg-fried (cauliflower) rice!
from page 286 - pasta and rice
 ***
(3) Marinated cucumber with mint - pg 122

and from the same page...
(3a) Avocado (pickled young papaya) and ruby grapefruit
with chili
 from page 122 - raw assemblies
pickled young papaya in place of avocado
(nope, still have not developed any liking for avocado
- but I did buy them and promptly forgot all about them
languishing in the fridge and had to throw them out!)

(4) Runner beans with tomatoes and garlic - pg 375
(I used long beans and ladies fingers)
cos I could not find 'runner beans'
 and
(5) on the Left below: Peperonata (page 20)  with
(6) Couscous salad with herbs and walnuts (page 89)
but instead of Summer couscous salad cos I prefer walnuts!
(7) and Runner beans with tarragon and lemon (page 375)

All for me as DH is in hospital for a minor surgery...
(8) Mexican tomato and bean soup (page 138)
with a mixture of black beans and white beans

lost a couple of lbs in July!

I'm glad to hear that enjoyed cooking with CCC again this month. You've made some wonderful dishes, and so many! I love the tweaks: pickled papaya and grapefruit sounds delicious (and I understand your feelings about avocado....it took me a long time before I was able to eat it and it's still not a favourite); ladies fingers (okra to me) would be perfect with that tomato sauce. Until next month....

Hi Emily, Great choices for the month and happy to hear you've lost a couple of pounds in the process. Hope all goes well for DH with the minor surgery. Love your use of the cauliflower rice combined with the stir-fry and I'll bet that what a distinctive and delicious flavor. It seems we made a few common dishes over the month including the stir fry, cucumber, runner beans with tomatoes and garlic and the green beans, new potatoes and olives, I enjoyed each and hope you did too. Happy to see you joining in the CCC, Enjoy!

Dear Emily, certainly hope that DH is recovering well from his minor surgery. And from the look of all your delightful dishes, you certainly stayed healthy this month! I am quite happy that you decided to join this more than lovely group of bloggers and that you share our enthusiasm for Hugh´s amazing cookbook!

Emily, you are right that great minds think alike! The cauliflower rice with the summer stir fry was so good!! It looks like you ate very well and very healthily this month. I keep eyeing that avocado and pickled grapefruit recipe in the book. Pickled papaya sounds awesome! Hope all is well with your husband.

First, Emily, no surgery is minor!!! (Trust me on that one.) And, like KB, I hope all is well with your husband. Not only did you make wonderful and healthy food this month but you were rewarded by losing two pounds. Good for you. I definitely am going to throw Peperonata into the mix next month. Everyone who made it this month loved it. I also made the cukes with mint, stir-fry and green beans with new potatoes and olives. No complaints about any of those recipes. I wasn't interested in the soup but since so many of you liked it, I just may give it a try. Papaya and grapefruit, now that's a combo I need to think about trying. Very, very nice Post. Love this CCC group.

You made so many dishes. Looks great! Hope DH is on the mend. I know you'll make him many healthy meals to fuel his recuperation!
