I'm totally jealous of your affordable premium food store. My beef cost me $35 for a pound! Yeek! Glad you enjoyed this dish. (No, my book isn't coming apart yet).
My book is a total disaster (although I am sure that's what cookbook authors want - their books to be used!). Glad you enjoyed this. My beef was $30 for 600g!
I haven't made this yet, but I am in the beef business and the margin of profit is very, very low, so if you purchase your beef from a good butcher! what you pay is worth it.
I purchased the online version of the cookbook! but I would have preferred the real cookbook. It's just not the same!

broth. It worked well, and all turned out delicious. The aroma was

First, Emily, Dorie's duck recipes are fabulous. Have you tried them? Did I miss something? Waffles with duck? Enlighten me. I like my beef rare and yours looks perfect. Glad you caught a bargain at your grocers. I am making this next week and I realize it's going to be an Ouch Moment for me. I don't think I'll get the bargain you did. My book is like Mardi's, a disaster. The spine is broken, of course. I almost look at that as a badge of honor but that's just me. Nice Post.

LOL Emily! My book has been falling apart for the last couple of years... I was thinking of getting it bound-again, but I'm pretty sure I won't bother in the end. I love it... :) we just piece it back together after every time we use it and generally it breaks apart even more... oh well :) it's very loved!
