FFwD ~ Boeuf à la Ficelle (Beef on a String)

Its Friday again!
Beef on a String
or Poached Beef
I skipped the ox-tail and bones
(and the celery root and turnips too)
and used the cubes
not as hearty but still good!
DH is having this for lunch later today
I had this serving for my late dinner last night!
forgot to snap picture before adding the hot broth
hence the beef look not rare but it was in the center!
below: before serving with hot broth and after a night's stay
in the fridge
below:
happiness is finding a premium food outlet without premium pricing!
I spied smoked duck breast slices the last time I visited!
so waffle with smoked duck might just happen soon at my kitchen!
below:
below: anyone's book coming apart too?

check out the rest of group's results at:
recipe from pages 248 to 251

Thanks for dropping by for a visit and leaving me a comment!

I'm totally jealous of your affordable premium food store. My beef cost me $35 for a pound! Yeek! Glad you enjoyed this dish. (No, my book isn't coming apart yet).

My book is a total disaster (although I am sure that's what cookbook authors want - their books to be used!). Glad you enjoyed this. My beef was $30 for 600g!

I haven't made this yet, but I am in the beef business and the margin of profit is very, very low, so if you purchase your beef from a good butcher! what you pay is worth it.
I purchased the online version of the cookbook! but I would have preferred the real cookbook. It's just not the same!

Glad you found such a deal! And that this was a winner at your house :) My cookbook is really splattered, but so far the binding is holding up.

I skipped the oxtail and bones as well. Glad this turned out well for you! I need to find a place like you did!

Wow - great pricing. And the duck sounds good too.

My book is still holding up pretty well, despite several years of abuse.

It's nice to have have a group to share our food victories with! Great price - great dish! We relly liked this, too.

Enjoy your weekend!

I skipped the whole bouillon preparation and used containers of
broth. It worked well, and all turned out delicious. The aroma was
fantastic.

Glad you got a bargain. I enjoyed this one more than I expected. Waffles with smoked duck sound great!

First, Emily, Dorie's duck recipes are fabulous. Have you tried them? Did I miss something? Waffles with duck? Enlighten me. I like my beef rare and yours looks perfect. Glad you caught a bargain at your grocers. I am making this next week and I realize it's going to be an Ouch Moment for me. I don't think I'll get the bargain you did. My book is like Mardi's, a disaster. The spine is broken, of course. I almost look at that as a badge of honor but that's just me. Nice Post.

Great shopping and I'm so glad to see that many of use are adapting this recipe to fit our needs and price tags.

LOL Emily! My book has been falling apart for the last couple of years... I was thinking of getting it bound-again, but I'm pretty sure I won't bother in the end. I love it... :) we just piece it back together after every time we use it and generally it breaks apart even more... oh well :) it's very loved!

Glad you enjoyed the beef! You have to try the bouillon with the oxtail and bones next time - so amazing!! Pretty much a great Pho base!

I would say that my book looks well worn…It should, I’ve been using it every week for the last three years! Your beef looks wonderful! Glad you found a bargain, and that you enjoyed this dish!

Great job on the premium outlet as well as the gorgeous results. My hubby also enjoyed this dish. And while my book is not (yet) splitting...it looks like it has been through a war ;)
