Cooking from books ~ Cooking without tears ~ Evelyn Wan

 Picked up two copies of Evelyn Wan's 'Cooking without tears' on a visit to our local SPCA sometime back (should have taken a third copy!).  Going through my cookbook collection; my rationale is ~ if I cook only one recipe from a cookbook, that itself pays for the cost of the book!
Above is my dinner tonight. 
Pancakes with ice cream, 1 cut up banana and 1 diced strawberry drizzled with lime syrup.
Made to a third of the following recipe (for 1 pax)

Pancake Batter:
240g (8oz) 2 cups cake flour
250 ml (8 fl oz) 1 cup milk
30g (1oz) 1/8 cup butter, melted
3 eggs
3 tsp double acting baking powder
pinch of salt
60g (2oz) 1/4 cup castor sugar (only for sweet pancakes)

Method:
Sift flour, baking powder and salt into the bowl.
Make a well. Add the eggs, milk, butter and sugar if desired, whisk to make a smooth batter. Let it rest at least 20 mins before use (darn! did not read this part)
Fry in spoonfuls on a flat-bottom pan or griddle over a medium heat for pancakes or cook in a waffle iron for waffles. Serve with butter, jams, honey, cream cheese, fresh fruit or fruit puree

Variations:
Blueberry pancakes: add 1/2 cup fresh blueberries to the batter.
Apple pancakes: Add 1/2 cup applesauce and reduce milk to 1/2 cup
Wholewheat Pancakes: Substitute wholewheat for all purpose flour
