My adaptation of Kylie Kwong's 'pan-cooked blue eye served
with kipfler potatoes and sage' - pages 160-161
1 medium-sized (vine-ripened) tomato, unsalted butter,
1 medium-sized potato, peeled and sliced into 1/4" thick rounds,
fresh shiitake mushrooms, stems discarded,
sea salt, 8 fresh sage leaves.
1 piece salmon fillet,
pinch of white pepper and sea salt
dash of olive oil
