Cookbook Countdown #6 ~ Celine's Minted pea omelette

 My June cookbook:
Celine J Marbeck's Quick & Easy Cooking
  pages 70 and 71: Minted pea omelette (recipe adapted for one pax)
chopped fresh mint leaves, salt & pepper, peas (fresh, frozen or canned)
butter, grated cheddar and one egg.
(I added a tablespoon of yogurt as I thought one egg was not enough
to make a full omelette in that small pan)
 Served with toasted Swiss Moments' Country Bread smeared
with grainy mustard

Hi Em,
I don't have either of these books. Almost bought The Eurasian Cookbook though. Minted pea omelette sounds good and yummy with the bread and mustard!
