TCS ~ April's Blueberry nut loaf

My chosen cake for April is Blueberry Nut (walnut) Loaf Page 178
I made the full recipe but used two 7" x 3" x 2" loaf pans
so instead of 70 minutes for a full size loaf pan
these were done in 45 mins 
that is the beauty of using smaller pans
- shorter bake time
- less slicing
- one for own consumption, one to be gifted!
 
for my breakfast, with my current fav drink - Turkish coffee
 
I must say - still healthy!   hahaha
well, there are berries, nuts and sugar!
Maida did say that this cake is very delicate
which it is, but still it sliced very well,
provided you go slow!

What a beautiful golden brown crust! It looks like you baked it up perfect! I hate a thick brown over baked crust on pound cake. You were able to manage to bake this to perfection, with only a thin layer of golden brown crust! Delicious! Great job Emily!
