Cookbook Countdown #2 ~ RK Seafood Paella Nests

Seafood Paella Nests ~ pgs 84-85
I omitted the clams and mussels but used salmon and large prawns
did not have broccoli but used cauliflower
added green chili, carrots and baby portobello mushrooms, chinese parsley
saffron threads, white wine and vegetable (not fish) stock
'mee suah' in place of rice vermicelli noodles, deep fried not baked
the rest as per recipe!

That bowl above, hubby cleaned it!

Hi Emily,

Cookbook Countdown is a great cooking event and thanks to you and Joyce for hosting it.

So sorry that I have managed to join you gals so late... I was busy with CNY cooking and baking lately. Will join you gals more when I'm reviewing cookbooks in the near future :)

Yummy paella!!! Very generous with the ho liew... LOL!

The problem with cookbook countdown is that I'm discovering cookbooks I want to add to my collection! I have nothing by Rachel Khoo but I'm so enjoying the diversity and deliciousness of the dishes you've made, I'm tempted to add one.

Zosia, That's our problem, non stop buying cookbooks! I just ordered four (only three are mine!) and two arrived! Rachel Khoo's Kitchen Notebook will be a really good addition to your bookshelf!

Hi Emily,
Mee suah is one one of my favourite noodle. A delicious idea to replace the rice vermicelli noodles. Looks delicious, no wonder hubby clean the plate! Like Zoe says, ho liew!!

Yes Joyce, the mee suah was a good substitute for the rice vermicelli. My mother just gave me a huge box of mee suah for CNY!

Now this is something I can find the ingredients for. Paella is a wonderful way to use up veggies and seafood.
