Another Rachel Khoo offering ~ Pea and sweetcorn fritters

this has frozen peas, corn kernels (I used canned)
eggs, rice flour as key ingredients.

 Above: hubby's portion - with a fried egg
below: mine with a poached egg (bad attempt at poaching!)
the avocado I used was unripe (found out only when I cut it open)
so it was frozen to be baked on another day
so served this with slices of cantaloupe
 this was dinner last Friday!
