Bought a big bunch of leeks, but only used four for this dish.
Washed the leeks, steamed them for thirty minutes (25mins should be good too). Drain them on paper towel.
I pan fried some thinly sliced Chinese sausage (instead of bacon), put the whole lot into the serving dish (then remove the sausages), add the mustard, sherry vinegar, and seasoning - whisk! Layer the steamed leeks pieces the best you can (cos they are rather delicate at this stage!). Top with chopped hard-boiled eggs, and sausage bits (and the chopped herbs which I totally forgot!) and eat!
