CC#36: crispy vegetables cakes

Whilst I could easily source most of the ingredients (and there were not many), getting hold of 'nude' aka non-plastic wrapped zucchini was a real pain. Everywhere I looked, they were all pretty and shiny in their plastic wrapping/casing etc.  I managed to appeal to the ladies in the backroom of a small fresh fruits and vegetables establishment to leave two pieces of zucchini as in when their next shipment comes in, and ta-da got them a couple of days ago.
While the above do not look at all like the picture in Mardi Michels' Cookbook for kids:

these were easy to pull together and baked for 15 minutes before flipping over to crisp up the other side.
