Chicken Soup with Winter Melon and Wolfberries
for two pax I used:
one chicken breast meat, cleaned and trimmed off fat
chinese wolfberries, washed
water, salt, ground black pepper,
winter melon chunks
dark soy sauce, chopped fresh coriander leaves
crisp-fried shallots

paired with purple sweet potatoes and blanched greens

I bought a round baby winter melon and this is the second dish
I made with it!  Very simple ingredients with delicious results.

Hi Emily,
I like winter melons, but do not often used it in cooking. I love it in soups!
