With a big apology to my TCSB members
I am one day late in posting
(cos I misplaced my card reader!)
but here is my Cuban Coconut Pound Cake ~ pg 172
The loaves look fine and smelt amazing while they baked in the oven,
but I am not happy at all with the interior
when the loaf was cooled enough to slice.
But it sliced beautifully with a serrated knife.
Guess what, tasted great when toasted!
The interior sure do not look like the results baked by

And well done members, all four of March Cake Selection were baked!

I made this same cake this month and love it so much. Every person who tried it loved it too. It's a keeper for sure.
