Cookbook Countdown #1 ~ MY Citrus Water Chestnut Cake

These are the only cookbooks by Martin Yan
that I collected over the years but not cooked a single
recipe from any of them!

 Citrus Water Chestnut Cake ~ pgs 328-329
into 1.5 cups water add
1 cup cornstarch, 0.5 cup flour
stir to combine into slurry

pour 1.5 cups water into a pot
add sliced fresh water chestnut
1 tablespoon candied ginger cut into thin strips
zest of two large limes
2 tablespoons lime juice
1 cup rock sugar
bring to a rapid boil for two mins
slowly pour the slurry into boiling mixture
stirring all the time until mixture turns thick
remove from heat

ladle mixture into oiled individual heat proof bowls 3/4 way full
steam for 20 minutes until mixture turns translucent
cool down to room temperature before chilling in the fridge
serve cold with a drizzle of maple syrup and top with a sprig of mint

Hi Emily,
Wow, such a special dessert! I can imagine how good this must be with all the ingredients in it, especially when served chilled!

Hubby likes this and asked for a repeat! Two servings left (from six) in the fridge!
