FFwD ~ Leeks vinaigrette with mimosa

 leeks half submerged in water
 below: 8 mins in my HappyCallPan
 tender when pierced with a knife
I made the leeks last night so they were well chilled
I made the dressing almost according to Dorie's recipe
my adaptation:
olive oil
sesame oil (in place of walnut oil)
honey dejion mustard (instead of plain)
sherry vinegar
pepper (and no salt cos.....)
I used a salted duck egg instead of 
normal chicken egg for the garnish!
hence omitted the salt
mixed well to bind
toss the leeks in some dressing to coat
garnish with sliced salted duck egg
(originally grated egg)

below: this was my dinner
 store-bought Uramaki Special with pickled ginger
but without the wasabi and shoyu sauce
the vinaigrette for the leek went very well with it instead!
so truly a European and Asian fusion meal!

  13. I just made salted eggs for the first time last month. They are an excellent addition to many things, and I get they were great here.
