Cook Like a Star, All Stars ~ Donna Hay's Chicken and Pumpkin Stir Fry

A quick and simple dish by Donna Hay
'off the shelf - cooking from the pantry'
chicken and pumpkin stir-fry
comprising of:
*chicken breast fillet (or like I did - meat from one chicken thigh)
*pumpkin - sliced thinly
*two onions -sliced
*black pepper corns - cracked
*1 red chili - seeded and chopped small
*cupful of sweet basil leaves
*2 tablespoons fish sauce

saute the onions, chili and black pepper in little peanut oil for minute or two
add chicken - cook for 3 minutes or till cooked
add the pumpkin
add the fish sauce
cover and cook till pumpkin is tender
stir in the basil leaves
and serve
with rice or noodles or eaten on its own
like I did with chopsticks!
