THB #7 ~ Strawberry Coffee Cake

Its our 7th bake at T.H.B. (The Home Bakers)
Welcome to The Home Bakers
from
Coffee Cakes: Simple, Sweet and Savory
pardon the quality of the pictures (left my camera at the office) - these are hp pics ;(

Top n Bottom: the person who received this ~ said ~ melts in the mouth

Above: the person who received this - okay lah

Above: DH ate one piece between spoonfuls of his morning oats - so so lah

Me ask DH: did you eat any cake for tea?
Oh... sure he did - the container was empty when I got home the first day it was in the fridge...
hence I had to bring out the last six pieces from the freezer!

(above: see the frozen strawberries in my hidden stash!?)
so gonna bake this again with blueberries!

The recipe for this awesome cake is available at the host's place ie
Alice of iloveicookibake.blogspot.sg

My notes (I baked the full recipe below):
8oz cream cheese at room temperature
117gm unsalted butter at room temperature
3/4 cup granulated sugar (I used 1/2 cup)
1/4 cup fresh milk
2 large eggs
1tsp vanilla extract
1 cup all purpose flour
1 cup cake flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
roughly 3 cups frozen strawberries: sliced and tossed in 1tbsp cake flour
slightly less than 1/4 cup soft brown sugar
1/2 cup chopped toasted walnuts

ps:  I also baked apple pies with store bought puff pastry (this pack was
the latest of at least 5 which I bought and threw away - cos I did not have
the courage to handle puff pastry!) aiyoh - so easy leh!
oh! of course I baked Lena's Wholegrain Bread!
 the very last slice

Hi Emily,
Haha! Your DH is very cute! Quietly finished everything on the plate! He must have loved the cake too and obviously can't stop at just one piece! You are one super baker, cake, pie and bread! Looking forward to your blueberry version! :)

Hi Emily,

Good that this recipe turned out to be a great success for most of us. The person that received the melt-in-the-mouth slice sounds very lucky to me :D
