My 1st Ever Apple Pie ~ Success!

I recently purchased a bag of wholemeal pastry flour and decided to try pie crust again..
for my double crusted apple pie:
1 cup APF, sifted
1 cup wholemeal pastry flour
2 tbsp soft brown sugar
1/2 tsp sea salt
7oz cold butter, cubed
* using my fingers, rubbed all the above ingredients together till small pebble size

1 egg, 1 tbsp cream, 2 tbsp lemon juice
mixed together
then using a fork
stir into the flour mixture to combine
pat the mixture together gently and shaped into a ball
put in the fridge to chill for 10 mins.

divide the dough into two, using 1 part - pressed firmly into bottom
of pie dish and up the sides, leveling the top edge,
prick the surface with a fork,
bake in preheated 200F oven for 8 mins
while I prepare the
the filling:
3 green apples and 1 red apple, peeled cored and diced,
tossed in with 2 tbsp soft brown sugar and a generous sprinking of cinnamon powder
and a generous large handful of raisins
mix well to distribute the cinnamon powder

pile the apple filling into prebaked crust
cover with balance of the crust which I rolled out thinly
stab this top crust with the knife to provide breathing hole for hot vapors
to ensure that the bottom crust do not turn soggy
bake for 35 mins
brush the top of pie with jam for a shiny finish!
leave to cool completely before slicing and serving it
with a scoop or two of your fav ice cream!
BTW had it for breakfast too this morning.
DH tasted a mouthful and ask what to scoop the ice cream with?
with the ice cream scoop of course I replied.
cut up the pie and pack three slices into individual containers in readiness
for DH to scoop as much ice cream he wants to top it off and eat!
two slices came to work with me today for bossman


Extremely pleased with this apple pie!
YUMMS! Flaky, nice crunch and the filling is nicely done without being soft!
and of course I baked Lena's Wholegrain Bread too

That's a lovely looking pie! Apple pie is one of my favourites, have been meaning to bake one for ages, well,...I'll just drool over yours first! :)

Lovely apple pie & healthy too with wholemeal flour. I've never tried pastry crust with wholemeal but will bookmarked this recipe to try it out when I harvest our apples this autumn! :)
