This was actually quite tasty, I used cayenne for the heat, and toasted sesame seeds for the garnish.
Did not charred the eggplants (lazy and can't stand too long at the stove while nursing a bad knee), only needed to roast the two small globes I bought (halved) for 30 mins.
I paired it with fragrant coconut spiced pork (instead of lamb) on mini black pepper poppadums. Both elements equally good on toasted rye bread.

Emily your dinner looks amazing! I love the sound of the pork you paired with the baba ganoush. I hope your knee feels better soon.

ReplyDeleteEmily, that looks so delicious. I really enjoyed the recipe as did my taste testers this week. Will definitely be making this again.
ReplyDeleteNice food pairings, Emily. Always so different from what I would do. I liked this recipe. Coconut spiced pork. Hmmm, sounds good. And, for what it's worth, I have a bad knee also!
ReplyDeleteLooks great, Emily! Hope your knee is on the mend.
