CC#31: Ketayap Gulung (rolled pancake)

 
This sweet coconut filling which I made earlier is the filling for a local Malaysian tea time treat.
Above: Pandanus pancakes with sweet coconut filling.  Fresh pandanus leaves are normally used in this recipe, but since I was gifted pandanus powder, I used that instead.  Turned out rather nice!
You may choose to add as much or as little of the filling in these rolled pancakes; as hubby is cutting down on his sugar intake, I used a wee bit.
 I am quite happy with the results of my first homemade Ketayap Gulung from scratch!
