Made this for one (moi) using one smallish eggplant, used coriander for the herb part, used a fork to mash it all up and let it chill in the fridge till I got home. All in all, pretty easy and quick to pull together, after breakfast!
My quick dinner for one with toasted sourdough bread, paired with a cold three bean soup slightly sweetened with rock sugar.
ps: chickpea puffs did not happen....

I miss the character Lisberg Salandar so much that I went hunting for the fourth book. Different author and translator, but it was not too shabby! With the original Millennium trio - I find myself thinking that the late author wrote them 'tongue-in-cheek', but the fourth book has a 'grown-up feel' to the writing and composition.
I discovered a new author, Barbara O'Neal! My first read of her's, which was also her first book, was pretty amazing. Another title is on it's way to me, can't wait!
I picked David Lodge's A Man of Parts for my current read, rather interesting! I am a huge fan of his and have quite a collection of his titles!

Sourdough is a constant in my kitchen. Eggplant and bread are working well together, I must say, for dinner or anytime. Like your dinner spread.

ReplyDeleteI liked the eggplant caviar also although It was garlicky. Did you put any garlic in it? David said to serve at room temperature so I didn't even think about chilling it. Glad you could get into my site. The Go Daddy guys checked it again and it was clean and "all green" which meant a Go.
