FFwD ~ Dressy pasta “risotto”

This week's recipe:
Dressy Pasta 'Risotto'
thought the bag of pasta was elbow ones but turned out to be spiral!
used fish stock instead of chicken
served with prawns with yellow capsicum, mushrooms with spinach
in mustard sauce (own concoction!)
my 'risotto' had excess liquid which I had to dump some
but had enough to 'slurp' when the pasta was gone!
(cos it was so darn good!)
I bet none of the other members got to slurp this risotto!
but then again I could have done something wrong with this recipe.
Dorie said this was supposed to be a 
dressy macaroni and cheese;
I guess the dressy part being mascarpone ~ 3.5 tablespoons of it!

  5. Mine was almost slurpable! I had to leave it simmering for a little longer with the cream and it thickened up nicely.

  6. Nice idea to use fish sauce - I bet some shell fish would have been a nice finishing touch inside of this dish, as well!

  8. I agree, great with a fish stock. We loved the whole easy way of cooking this recipe, very similar to cooking risotto, which we love. Happy New Y.ear

  18. I had extra liquid leftover as well which I just drained off and carried on. I assumed that it was because my pasta was a different shape and size from Dorie's.

  20. Wow- it looks amazing Emily ! I wish I had enough of the liquid to slurp. Thankfully mine was more creamy than it showed up as in the picture but I will still add a bit more cream next time. Great pairing with the prawns- YUM !
