Chestnut and Pear Soup
saute onions first, then leek and celery
followed by pear, stock, then the chestnuts
after rapid boil, simmer for 45mins
(or less depending on chestnuts used)
my variation was:
1 cup veg broth + 2 cups water (instead of 4 cups of stock)
1 sprig rosemary
used frozen chestnuts
choose to serve it without the cream but used thin slices of pear for garnish

remember the main ingredients were leeks and celery,
so this was slightly thick (not runny) but delightfully light on the tongue!
(and cos I only use the blender for 10 secs) had bits of chestnuts to bite on!

I had one and half serving of the soup in this bowl
for my dinner in addition to this salad and put the rest in the fridge
with instructions to DH that he needs to reheat the soup when
necessary, by the time I came home from work,
all was gone ~ DH had it for lunch and dinner!

ReplyDeleteGlad you and DH enjoyed this one! All I could find was bottled chestnuts and they were sort of expensive! Next time I'm in Dallas I will look for the frozen ones to keep on hand!

ReplyDeleteSounds as if this was a winner at your house. I am glad to know you made it with vegetable broth. I want to make this again for a ladies luncheon and there is a vegetarian in the crowd so I thought this was an ideal starter. (I used chicken stock) Since it got rave reviews at your house, I'll do it.
