Aspiring Bakers #24 (October 2012) : Jellies & Puddings ~ Eton Mess

Eton Mess, a traditional English pudding!
It helps when you have frozen meringue shells in your freezer!
I made this Eton Mess for one:
lightly toasted a couple of meringue shells, cool and break into small pieces,
a teaspoon of lemon curd whipped into a big splash of whipping cream,
(with a handful of frozen strawberries - do not breakup the berries - put in a small pot, add a splash of water, a teaspoon of brown sugar, bring it to a slow boil to reduce, lastly add a splash of balsamic vinegar, further reduce to thick syrup)
layer the meringue pieces in serving vessel, top with strawberries, layer the lemon cream,
more meringue pieces, lemon cream and strawberries.
chill your creation till serving time!
